This is a great dish that is really quick and easy to make, healthy and really yummy. You don´t have to use all the ingredients below, make the most of special offers in the greengrocers or just what you have in the fridge (brocolli is a good option if you don´t have french beans). Cut all the vegetables and the chicken into fine strips before starting.
Tip: I keep root ginger in the freezer and grate it from frozen.
Ingredients for 4 :
-2 chicken breasts -2 carrots
-1 onion, finely chopped -1 red pepper
-1 – 2 garlic cloves -1 green pepper
-½ -1 teaspoon grated root ginger -8 mushrooms
– 3-4 tablespoons soy sauce (light (4) or dark (3) ) -1 large courgette
-1 tablespoon rose water – handful of french beans
– Nomu oriental rub seasoning – to taste
Put a couple of tablespoons of olive oil in a wok or large frying pan on a high heat. First put the french beans and carrot ( or the vegetable that will take the longest to cook) into the hot oil and turn down to a medium heat. Leave to sauté for a few minutes so that they start to soften. Next add the onion, garlic and ginger, when the onion golden add the rose water and straight after the cougette and peppers. After a couple of minutes stir in the chicken . When nearly cooked add the mushrooms, soy sauce and a pinch or two of the Nomu rub. Toss the mixture a couple of times so that all the ingredients have been coated by the soy sauce.
Serve with the noodles of your choice, spaghetti or rice.
