TRINXAT
Traditional warming, winter dish from Catalonia.
Ingredients for 4 people:
1 broccoli 4 potatoes 4 slices of pancetta or smoked bacon, cut into strips 12 mushrooms olive oil , salt and white pepper 1 clove of garlic, finely chopped
Boil the broccoli and the potatoes , meanwhile heat the oil in a large frying pan , once heated added the pancetta, when it starts to turn golden , add the garlic and mushrooms and sauté.
Once the broccoli and potatoes are done , drain and add to the frying pan .Turn down the heat to low and with a fork mash the broccoli and potato until you get a rough purée , mix thoroughly and leave on a low heat until a light crust has formed on the bottom , turn the mixture over as with a pancake or tortilla and leave to form a light crust as before.
Optional extra: add grated cheese and put under the grill for about five minutes until golden.
