Ingredients for 4 people:
2 skinless cod fillets 1 potato 1 clove of garlic ( chopped) salt pepper 2 ½ tablespoons olive oil 1 tablespoon milk
To go with it: 4 potatoes olives walnuts piquillo peppers
Boil the potato until very soft and then drain.
Meanwhile place the cod in boiling water for 30-60 seconds, drain, break up roughly and put in a suitable recipient for using a hand blender. Add the garlic, potato a little pepper, the milk, oil and a small pinch of salt. Blend until you have a smooth paste.
Serve on crackers ( we´ve used rosemary and salt crackers) with broken up walnuts, halves of black olives , piquillo peppers and roast potatoes. Another option is to stuff piquillo peppers with the cod brandade.
To make the roast potatoes:
Peel and cut the potatoes into chunks. Put in a roasting tray with olive oil, a little salt and freshly ground pepper . Make sure all the potatoes are coated with a little oil. Put in the oven for 45minutes- 1 hour on a medium heat , stir / toss every now and then, until they are crisp and golden.
