Catalan Spinach ( Espinacas a la catalana )

Great as a starter or to accompany grilled meat or fish

Ingredients for 4 people:

2 tablespoons raisins or sultanas         1kg fresh spinach      1 clove of garlic ( finely chopped ) 2 tablespoons olive oil      2 tablespoons pine nuts          salt and pepper         2 slices white bread without crusts cut into triangles

 Instructions:

Make sure the spinach is clean and that the tough stalks are removed.

Roughly cut the spinach with scissors.

Put the oil in a large frying pan or terracotta dish put on a low heat.

Add the garlic, once golden ,add the spinach and a little salt. Stir well and cook for around 5 minutes. Once the spinach is cooked add the pine nuts and raisins. Season to taste with salt and pepper, stir again. Remove from the heat and leave to cool for 5 minutes.

Meanwhile put a little olive oil in a frying pan and fry the bread until golden.

Serve the toasted bread alongside the spinach.

 Note: You could also add finely chopped bacon. If so, add with the garlic.
