Tastier than boiled potatoes and quicker than jacket potatoes , this is a great option for busy people
Ingredients:
Potatoes ( skin on )
Maldon Sea Salt
Freshly ground pepper
Olive Oil
To accompany:
Romesco Sauce
All i Oli
Pre-heat the oven on highest setting . Put a saucepan of water on to boil.
Cut the potato in half lenghtways , put in the boiling water until flesh of the potato turns white , then remove.
Leave to cool until able to handle . With a knife , lightly score the flesh in the form of a cross
Put the potato halves in a oven-proof dish. Season with Maldon sea salt , freshly ground pepper and a dash of olive oil.
Bake for around 20 minutes ( dependant on size of potato ) and finish with 2-3 minutes under the grill until golden
